A really different but very tasty baked chicken salad - one of my potluck favorites Ingredients:
2 cooked chicken breasts, boned, skinned and cubed |
1 cup cream of chicken soup |
1 cup chopped celery |
1/2 cup mayonnaise |
dry green, or fresh chives (garnish) |
1/2 cup chopped almonds |
2 tablespoons lemon juice |
3 hard boiled eggs, peeled and chopped |
crushed potato chips |
paprika (garnish) |
Directions:
1. mix all ingredients (except garnishes) gently 2. top with crushed potato chips and a few extra almonds 3. spoon in to lightly greased casserole 4. bake 30-40 minutes at 350 5. Sprinkle chives and paprika over. 6. Serve hot |
