Great, cool weather alternative to cold chicken salad. Serve with a green salad and hot rolls for a cozy winter supper. Ingredients:
2 cups cooked chicken, diced |
1 cup chopped celery |
2 hard-boiled eggs, diced |
1/2 cup mayonnaise |
1 teaspoon lemon juice |
1 (10 3/4 ounce) can cream of chicken soup or 1 (10 3/4 ounce) can cream of celery soup |
2 teaspoons chopped pimiento |
salt and pepper |
fresh breadcrumb |
Directions:
1. Mix all ingredients together and place in greased casserold baking dish. 2. Top with bread crumbs. 3. Bake at 375 degrees for 30 minutes. 4. This dish freezes well after baking. |
