Just a really tasty dish that is fun to cook. Ingredients:
3 cups diced and cooked boneless skinless chicken breasts |
1 cup diced and cooked celery |
1/2 cup toasted almond |
2 tablespoons chopped onions |
1 1/2 cups cooked rice |
3/4 cup mayonnaise |
1/4 cup chicken broth |
1 can cream of chicken soup |
1 tablespoon lemon juice |
3 hard-boiled eggs, sliced |
2 cups crushed potato chips |
Directions:
1. Cook chicken in a skillet until the juices run clear. 2. Add celery and onion and cook together for 3 minutes once chicken is done. 3. In a mixing bowl add all the ingredients, including chicken and celery, together and mix well. 4. Put mixture in a buttered baking dish and cover with crushed potato chips. 5. Bake at 350 degrees for 20 minutes. |
