I serve this good dip at parties some times is it ever good just a bit different from the norm. Hope you enjoy this as much as our guest does. We serve this with assorted crackers Ingredients:
2 tbsp. butter |
1/4 cup chopped onion |
4 cloves garlic, minced |
1 tbsp. all-purpose flour |
1-3/4 cups half and half |
2 pkgs. (9 oz. each) frozen chopped spinach, thawed, well drained |
1 can (8-oz.) sliced water chestnuts |
1 cup shredded sharp cheddar cheese |
1 pkg. (1-oz.) dry vegetable soup mix |
1/4 cup shredded parmesan cheese |
Directions:
1. Preheat oven to 425*F. 2. Melt butter in a large sauce pan over medium heat. 3. Add onion and garlic. 4. Cook and stir until onion is crisp-tender and garlic is fragrant, 3 minutes. 5. Stir in flour, cook an additional minute. 6. Add half and half. 7. Cook stirring constantly until mixture boils and thickens, 2 minutes. 8. Remove sauce from heat. 9. Stir in chopped spinach, water, water chestnuts, Cheddar and vegetable soup. 10. Spoon dip into a 1 qt. casserole dish. 11. Sprinkle with Parmesan cheese. 12. Bake dip until it is bubbly and cheese is melted. 13. Hints: 14. It is not necessary to grease the casserole dish because of the high fat content of the Cheddar!!!! |
