These just make my mouth water writing down the recipe. Sometimes I will add one or two yukon gold to the mix if I know people don't like them too hot. Me? There is no too hot. Ingredients:
yams, 1 1/2-inch dice 5 lb |
water 4 gal |
salt 1 1/2 tsp |
butter 6 oz |
cayenne 3/4 tsp |
chipotle powder 1/4 tsp |
ground coriander 3/4 tsp |
ground cinnamon 1/4 tsp |
fresh orange juice 1/4 c |
granulated garlic 1/2 tsp |
ground white pepper 1/4 tsp |
salt 1 1/2 tsp |
optional couple of white potatoes |
Directions:
1. Instructions: 2. Bring the water to a boil, add the salt and cook yams until tender. Drain and place them into a mixing bowl. Add remaining ingredients and mix until smooth. |
