Different fruit salad. Zesty and very refreshing. From First magazine. Ingredients:
1/2 cantelope and/or honeydew melon,peeled and seeded |
1 oranges divided |
1/2 c prepared olive oil vinaigreet dressing |
1/4 tsp ea. ground cinnamon,cumin,chipolte pepper |
2 tbs chopped golden raisins-and-dried cherries blend |
1 tsp fresh chopped chives |
Directions:
1. Using melon baller,scoop cantelope into balls. Zest and juice 1 orange. Peel remaining orange and slice into 1/4 rounds. 2. In bowl,combine next 3 ingredients,2Tbs orange juice and 1 Tbs orange zest. Stir in dried fruit. Add melon balls;toss gently to coat. 3. Arrange orange slices on platter lined with lettuce leaves,if desired. Spoon melon mixture onto orange slices. Sprinkle with chives. |
