I saw Bobby Flay do a show on hot browns and I came up with this Ingredients:
3 tablespoons butter |
1 teaspoon finely chopped onion |
3 tablespoons flour |
1 cup hot milk |
1/4 cup parmesan cheese |
1 teaspoon chopped parsley |
1/2 teaspoon salt |
1/2 teaspoon fresh ground black pepper |
1/4 teaspoon nutmeg |
1 egg yolk |
1 cooked turkey breast |
4 slices cooked thick bacon |
1 tomato |
2 slices texas toast thick bread |
Directions:
1. For the sauce. 2. Melt butter in a saucepan over medium-low heat; add chopped onion. Cook over low heat until onion has softened. Stir in flour and cook, stirring, until smooth. Gradually add milk, stirring constantly. Add remaining ingredients; cook, stirring, until cheese is melted and sauce is smooth. Beat egg yolk in a small bowl; add about 1/4 cup of the hot liquid to it, stirring constantly. Pour egg yolk mixture into the hot liquid; stir until the sauce is smooth and hot. To reduce the risk of curdling, a double boiler can be used after the onions are cooked. 3. Making the Hot Brown. 4. Heat oven to 400 F, in a shallow backing dish add Texas toast, layer with turkey breast. Pour a generous amount of sauce. Top with a slice of tomato and 2 strips bacon. Repeat for second Hot Brown. Place in oven 10-15 minutes or until sauce in starting to brown on edges. |
