My take on beef dip - with sort of a Mexican flair. Ingredients:
1 lb ground chuck |
1/2 cup onion, chopped |
1/4 cup bell pepper, chopped |
1 garlic clove, minced |
1 teaspoon salt |
1 tablespoon chili powder |
1/2 teaspoon ground cumin |
2 tablespoons ketchup |
1 (16 ounce) can refried beans |
1/2-3/4 cup cheddar cheese, shredded |
sliced ripe olives (optional) |
Directions:
1. Brown beef with the next three ingredients. Drain well. 2. Add next 4 ingredients and combine. Stir in the refried beans. 3. Heat, stirring frequently until hot. 4. Top with the cheese and olives (if using). 5. Serve with tortilla chips or crackers. |
