I was included in the blog on what to do when you get into a chicken recipe rut. You can also use 6 boneless skinless breasts and the baking time should be right around the same. Ingredients:
1 cup apricot preserves |
1/2 cup ketchup |
1/4 cup soy sauce |
2 teaspoons garlic, minced |
2 teaspoons hot pepper sauce |
3 lbs chicken drumsticks (about 12) or 3 lbs chicken tenderloins |
Directions:
1. Preheat oven to 350°F. 2. In a small saucepan, combine preserves, ketchup, soy sauce, garlic and hot pepper sauce. Cook and stir over medium-low heat until preserves are melted. 3. Arrange chicken in a single layer on a 13 x 9″ baking pan. 4. Pour sauce over drumsticks, turning to coat. 5. Bake, uncovered, for 40-45 minutes or until chicken is done, spooning sauce over drumsticks while baking. |
