This is a seasoned rice that makes a great side dish. This recipe makes 2 cups of cooked rice, but can easily be doubled. Ingredients:
1/4 cup green pepper, chopped |
1/4 cup fresh tomato, chopped |
2 tablespoons chopped onion |
2 medium gloves of garlic, minced |
4 tablespoons vegetable oil |
1 2/3 cups water |
2/3 cup raw long-grain rice |
1/2 tespoons crushed oregano leaves |
1/4 teaspoon cayenne pepper, more to give more spice |
Directions:
1. In a medium saucepan, cook green peppers, tomato and onion with garlic in oil until tender-crisp. 2. Add remaining ingredients. 3. Bring to a boil, cover. 4. Reduce heat to low, cook 25 minutes or until liquid is absorbed. 5. May stir to prevent sticking. 6. Sprinkle with additonal seasoning if desired. |
