3 (14 ounce) cans chicken broth |
1 1/2 cups quick-cooking rice |
1 lb chicken breast, diced |
1 1/2 teaspoons minced fresh ginger |
1 tablespoon hot chili oil |
1 tablespoon rice wine vinegar |
1 bunch scallion, sliced |
Directions:
1. Heat chicken broth, rice and 3 cups water to a boil. Add chicken to soup. Reduce heat to medium low, cover, and cook until rice is tender and chicken is cooked. 2. Add ginger, chile oil, vinegar and scallions and cook 2 minutes to blend flavors. |
