Szechuan style dish that can be served hot or cold. Ingredients:
1 pound cabbage |
3 tablespoons oil |
6 - 12 peppercorns (szechuan if available) |
2-4 red chilies (chinese or de arbol) |
1/2 teaspoon salt |
1 tablespoon brown sugar |
1 tablespoon soy sauce |
2 tablespoons rice vinegar |
sesame oil to taste (few drops) |
Directions:
1. Have all ingredients portioned and ready before beginning. 2. Cut cabbage into 1.5 squares. 3. Heat oil in wok until starting to smoke. Add peppercorns and chilies for about 20 seconds. 4. Add cabbage and stir-fry for 2 minutes. 5. Add salt and sugar, stir-fry for 1 minute. 6. Add soy, vinegar, and sesame oil, server immediately. |
