2 lbs small waxy potatoes, scubbed |
1 teaspoon salt |
2 tablespoons grated fresh horseradish |
2 tablespoons rice vinegar |
2 teaspoons fresh thyme |
1/2 cup olive oil |
2 stalks celery, finely chopped |
black pepper |
Directions:
1. Place potatoes in a large saucepan and add boiling water to cover. 2. Cover loosely and bring to a boil. Reduce heat and simmer for 20 minutes, or until potatoes are tender. 3. Let cool until able to handle. Cut potatoes in quarters. 4. In a large serving bowl, whisk together horseradish, vinegar and thyme. Add oil in a thin stream, whisking to blend. 5. Season to taste with salt and pepper. Add potatoes and celery and toss to coat. Serve warm. |
