Horseradish Mashed Potatoes |

A puree of potatoes livened up with horseradish. Especially complementary to braised short ribs or roast beef. You can also use a combination of heavy cream, butter, and olive oil. To make the dish Kosher use olive oil. Ingredients:
5 large russet potatoes, peeled and halved |
1 quart heavy cream or 1 1/2 cups butter or 1/2 cup olive oil |
2 tablespoons prepared horseradish |
2 tablespoons olive oil |
2 tablespoons salt |
salt & freshly ground black pepper |
Directions:
1. Place potatoes in a saucepan and cover with water and the 2 tablespoons salt. Bring to a boil, then reduce heat and simmer 45 minutes until potatoes are very soft. 2. Meanwhile combine horseradish with 2 tablespoons olive oil. 3. Rice potatoes or pass through a small sieve. Add cream or butter or olive oil and horseradish mixture; mix thoroughly. Season with salt and pepper. |
