Horseradish Mashed Potatoes |

This came from Cooking Light magazine. It goes great with short ribs or steak. Ingredients:
2 1/2 lbs baking potatoes, peeled and cut into quarters |
3/4 cup warm 1% low-fat milk |
2 tablespoons sour cream |
1 1/2 tablespoons prepared horseradish |
1 teaspoon kosher salt |
1/2 teaspoon ground black pepper |
Directions:
1. Place potatoes in a large saucepan; cover with water and bring to a boil. 2. Cook for 20 minutes or until very tneder. 3. Drain. 4. Combine potatoes, milk and remaining ingredients in a large bowl. 5. Mash with a potato masher. |
