Horseradish-crusted Pork Chops |

This has got to be one of the best recipes I have ever tried. I love it... Found on the internet. Takes an overnight marinade that isn't reflected in the prep time. Ingredients:
4 (1 1/2 inch) thick pork center loin chops |
2 cloves garlic, minced |
1 tsp. rosemary, chopped |
1 tsp. thyme, chopped |
2 tb olive oil |
1 tsp. salt |
1/2 tsp. cracked black pepper |
1 tsp. olive oil |
horseradish crust (recipe below) |
Directions:
1. In a large self-sealing bag, mix together the garlic, rosemary, thyme and 2 TB olive oil; add chops and seal bag; refrigerate overnight. Remove chops from bag; season with salt and pepper. Heat oven to 450 degrees. Heat the 1 tsp. olive oil in a large nonstick skillet over medium-high heat. Add chops and cook for 5 minutes; turn and brown for 5 minutes more. Remove chops to shallow baking dish; top each chop with 1-2 TB Horseradish Crust and place in oven for 6-8 minutes, until the crust is golden brown. 2. HORSERADISH CRUST: 3. In a large mixing bowl, beat the following together well: 4. 1 stick softened butter 5. 6 TB prepared horseradish 6. 1/4 tsp ground black pepper 7. 1 c. fine dry bread crumbs 8. Cover and refrigerate until ready to use; refrigerate any leftovers. |
