Here is a lightened version of a classic accompaniment to roast beef, burgers or baked potatoes. From EatingWell, Winter 2004.
Ingredients:
2 tablespoons reduced-fat mayonnaise
2 tablespoons nonfat yogurt or 2 tablespoons low-fat plain yogurt
2 tablespoons prepared horseradish
fresh ground pepper, to taste
Directions:
1. Whisk together mayonnaise, yogurt, horseradish and pepper in a small bowl until smooth.
2. Make Ahead Tip: Cover and refrigerate for up to 2 days.
