Inspired by Kristopher's apple soup, I thought I would post my own. Ingredients:
2 c of apple juice |
1 tbsp of butter |
1/2 cup of horseradish |
2 cloves of sliced garlic (cut this very fine) |
1 dash of freshly grated nutmeg |
3 apples (granny smith -or- golden delicious), cored and chopped, skin-on |
1 chopped onion |
1 c of white wine |
2 tsp of salt |
Directions:
1. In a hot, med-sized, thick-bottomed soup pot, sweat the garlic and onions in the butter for a few mins. They will aromatize when ready. 2. Add the remaining ingredients. 3. Stir this a little while bringing the mixture to a boil then reduce the heat to just a simmer. Simmer the soup until the apples soften up, about 20 mins. 4. Puree the soup in a blender until smooth. Now strain it through a FINE mesh strainer (hopefully you have one). 5. Serve the soup immediately by returning it to its clean pot and reheating. You can also refrigerate this to serve later. |
