Ingredients:
2 cups dried black-eyed peas |
3/4 pound ham, chopped |
1 quart water |
1 cup chopped onion |
1 teaspoon salt |
1/2 teaspoon pepper |
1/2 teaspoon hot sauce |
2 cups hot cooked rice |
1/2 cup chopped green onions |
Directions:
1. Bring peas and water to cover to a boil in a large saucepan; cook 2 minutes. Remove from heat; cover and let stand 1 hour. Drain. 2. Bring ham and 1 quart water to a boil in saucepan; boil 15 minutes. Add peas; cover, reduce heat, and simmer, stirring occasionally, 45 minutes. 3. Add onion and next 3 ingredients, and return to a boil. Cover, reduce heat, and simmer 15 minutes or until peas are tender. Stir in hot rice and green onions. |
