Don't limit yourself to serving this delicious rice side dish recipe only on New Year's Day. Plate it with ham all year long for a tasty, filling meal. Ingredients:
2 teaspoons olive oil |
1/4 cup finely chopped green onions |
1 garlic clove, minced |
1 (15.8-ounce) can black-eyed peas, rinsed and drained |
1 (8.8-ounce) pouch microwaveable cooked brown rice (such as uncle ben's ready rice) |
Directions:
1. Heat oil in a large nonstick skillet over medium-high heat; add onions and garlic. Sauté 30 seconds or until lightly browned. Add peas; cook 2 minutes or until thoroughly heated. 2. While peas cook, microwave rice according to package directions. 3. Add rice to pea mixture; toss well. |
