Ingredients:

2/3 cup(s) onion |
1 clove(s) garlic |
1 tablespoon(s) canola oil |
16 ounce(s) black eyed peas |
3/4 pound(s) diced ham |
2 1/4 cup(s) chicken broth |
1/4 teaspoon(s) crushed red pepper |
1 piece(s) bay leaf |
1 cup(s) uncooked rice |
freshly ground pepper |
Directions:
1. Garnish: celery leaves 2. Cook first 4 ngredients in hot oil in a dutch oven over medium heat stirring constantly, until tender. Stir in peas and next 4 ingredients. Bring to boil; cover, reduce heat, and simmer 30 minutes. Stir in rice; cover and cook 20-25 minutes or until liquid is absorbed and rice is tender. Discard bay leaf before serving. Sprinkle with freshly ground pepper. |
