Ingredients:
1 cup(s) celery
2/3 cup(s) onion
1 clove(s) garlic
1 tablespoon(s) canola oil
16 ounce(s) black eyed peas
3/4 pound(s) diced ham
2 1/4 cup(s) chicken broth
1/4 teaspoon(s) crushed red pepper
1 piece(s) bay leaf
1 cup(s) uncooked rice
freshly ground pepper
Directions:
1. Garnish: celery leaves
2. Cook first 4 ngredients in hot oil in a dutch oven over medium heat stirring constantly, until tender. Stir in peas and next 4 ingredients. Bring to boil; cover, reduce heat, and simmer 30 minutes. Stir in rice; cover and cook 20-25 minutes or until liquid is absorbed and rice is tender. Discard bay leaf before serving. Sprinkle with freshly ground pepper.
