This is the traditional serving of black-eyed peas that many think is essential in starting the New Year. Some believe that rice is also important so this dish covers that also. Ingredients:

4 strips of bacon |
1 small onion, diced |
canned black-eyed peas - 1 |
chicken broth - 4-cups |
minute rice -2 cups |
Directions:
1. Pan fry the bacon; remove, drain, and crumble. 2. Add the diced onion to drippings and cook until soft. 3. Stir in the black-eyed peas and the chicken broth and the rice. 4. Cook 10-minutes. 5. Top with crumbled bacon 6. Susana in Louisiana |
