We had this all the time at home, except when corn was in season, and then we ate corn on the cob. I never see it anywhere, but everybody loves this. Simple, as it should be, because corn, like beef, needs no added flavor other than butter. Ingredients:
1 package frozen corn, preferably shoepeg |
1 green or red bell pepper (optional) |
1 stick butter |
salt and sugar |
Directions:
1. Melt the butter in a saute pan (if using bell pepper, stem, seed, and finely chop). Add the corn, and saute over medium-high heat, stirring, until the corn has lost most of its moisture (you can make creamed corn by adding some cream and letting it cook in). Taste. If the corn isn't sweet, add a pinch of sugar. Salt to taste, and serve. |
