A great Southern side dish. This recipe was passed down to me by my husband's grandmother, Honey , a sweet Southern woman who loved to prepare meals for her family. This is my favorite of her side dishes. Ingredients:
1/4 cup butter |
1/4 cup flour |
2 teaspoons salt |
1 1/2 tablespoons sugar |
1 3/4 cups milk |
3 cups corn, fresh or frozen |
3 eggs (beaten & frothy) |
Directions:
1. Butter a casserole dish (I use a rectangular 1. 5 qt... round one works well, too). 2. Beat eggs until frothy and set aside. 3. Melt butter in saucepan. 4. Stir in flour, salt and sugar. 5. Cook until bubbly. 6. Add milk and cook until thick. 7. Stir in corn. 8. Stir in eggs that have been beaten. 9. Pour into well buttered casserole dish. 10. Bake in a hot water bath at 350 degrees for 45 minutes. 11. (Sit the dish down into a larger pan or casserole dish that contains an inch of water). |
