Honeymoon Chicken and Biscuits |

This is from the Gooseberry Patch Cookbook. We like this! The oats and maple syrup are the secret ingredience in this one!! Ingredients:
1 cup red onion, chopped |
1/2 cup butter, divided |
10 1/2 ounces chicken broth |
1/4 cup dry sherry or 1/4 cup water |
1 cup flour, divided |
1 teaspoon poultry seasoning |
2 1/2 cups chopped chicken breasts, cooked |
10 ounces frozen vegetables |
3/4 cup quick-cooking oats |
2 teaspoons baking powder |
1/2 cup nonfat milk |
1 egg white |
1 tablespoon maple syrup |
Directions:
1. Cook onion in 2 tb butter in a skillet over medium heat, about 3 minutes. Stir togather broth, sherry or water, 1/4 cup flour and seasonings and add to skillet. Cook 3 minutes or until thickened. Stir in chicken and vegetables. Pour into lightly grease 2 quart baking dish. Combine remaining 3/4 cup flour, oats and b.powder. Cut in remaind butter until crumbly. Stir in milk, egg white and syrup until moistened. Drop by 1/4 cupfuls onto chicken mixture. Bake 425 about 30 minutes. Enjoy! |
