Honeydew Blueberry Popsicles |

One of the best ways to get my kids to eat fruit is to freeze it. I got this from a grocery store recipe card. Ingredients:
1/2 honeydew melon |
2 pints blueberries |
1 lime |
1/2 cup water |
2 tablespoons honey |
1 tablespoon finely chopped fresh mint |
Directions:
1. In a small sauce pan combine the water, honey, zest of the lime and mint. Bring to a boil over high heat, remove it from the heat and cool completely. 2. Seed, cut off the rind and cut the honeydew melon into 1 inch cubes. Add honeydew chunks, blueberries and lime juice to a blender. Process until smooth. 3. Strain the honey mixture into the melon, pulse one or two times, until incorporated . Pour into popsicle molds. Freeze until firm. Nowadays you can often pick up the milds at the dollar store but if you don't have any you can just pour the mixture into small paper cups. Cover the cup tightly with plastic wrap then insert a stick. Cooking time does not include freezing time. |
