A light refreshing salsa. From my Australian/Mexican cookbook.
Ingredients:
2 cups honeydew melon, finely diced
1 red onion, finely chopped
2 small red chilies, finely chopped (seeded optional)
3 tablespoons chopped fresh coriander
2 -3 tablespoons lime juice
Directions:
1. Combine all ingredients and stir gently.
2. Serve immediately.
