A light refreshing salsa. From my Australian/Mexican cookbook. Ingredients:
2 cups honeydew melon, finely diced |
1 red onion, finely chopped |
2 small red chilies, finely chopped (seeded optional) |
3 tablespoons chopped fresh coriander |
2 -3 tablespoons lime juice |
Directions:
1. Combine all ingredients and stir gently. 2. Serve immediately. |
