from Prevention Magazine; can be used with small loaf pans to make 4 mini loaves or super mini loaf pans to make 8. Per Prevention a super mini loaf is actually 2 servings. Ingredients:
2 cups whole wheat flour |
2 tsp baking powder |
1/2 tsp baking soda |
1/2 tsp ground cinnamon |
1/2 tsp ground ginger |
1/8 tsp salt |
2 large eggs |
1/8 cup splenda brown sugar blend |
1 cup honey |
1 tsp instant espresso or coffee granules stirred into 2/3 cup water |
1/2 cup canola or safflower oil |
1 tsp vanilla extract |
1 cup walnuts (or any variation of mixed nuts) |
Directions:
1. Preheat oven to 350*F with oven rack in middle position. Oil and flour loaf pans. 2. Combine flour, baking powder & soda, cinnamon, ginger, and salt in a medium bowl. 3. In a separate bowl beat eggs, brown sugar on high for 1 minute then add honey, coffee, oil, and vanilla extract. Beat on low for a minute then stir in flour mix and walnuts. 4. Pour batter into loaf pans and set on baking sheet if desired. Bake 25-30 minutes or until toothpick inserted in center comes out clean. If using multiple pans rotate them after 10 minutes of baking time. 5. Cool on rack ~ 5 minutes. Run knife around edges and remove loaves. Cool completely. |
