Honey Wheat Zucchini Bread |

This is an old family recipe that I have adjusted to be able to be made with whole wheat flour and honey. Ingredients:
2 cups grated zucchini |
3 eggs |
1 cup honey |
1/2 cup applesauce |
1/2 cup olive oil |
1 tablespoon vanilla |
1 teaspoon baking soda |
1 teaspoon salt |
1/4 teaspoon baking powder |
1 tablespoon cinnamon |
1 1/2 cups all-purpose flour |
1 1/2 cups whole wheat flour |
Directions:
1. Beat zucchini, eggs, honey, applesauce, oil, and vanilla until frothy. 2. Add remaining ingredients and mix until blended. 3. Grease and flour two bread pans. 4. Pour batter evenly into the pans. 5. Bake at 325 for 1 hour. |
