1 cup king arthur unbleached all-purpose flour |
1/2 cup king arthur premium 100% whole wheat flour |
2 teaspoons baking powder |
1/2 teaspoon salt |
1 egg |
1/2 cup honey |
1/2 cup milk |
1/4 cup vegetable oil |
1 teaspoon grated lemon peel |
Directions:
1. In a large bowl, combine flours, baking powder and salt. In another bowl, beat egg, honey, milk, oil and lemon peel; stir into the dry ingredients just until moistened. 2. Fill greased muffin cups three-fourths full. Bake at 375° for 18-20 minutes or until muffins test done. Cool in pan for 10 minutes before removing to a wire rack. Yield: 6 muffins. |
