From Favorite Name Brand Muffin Collection Ingredients:
1 1/4 cups oat bran |
1 cup all-purpose flour |
2 teaspoons baking powder |
1 teaspoon baking soda |
1 teaspoon ground cinnamon |
1/2 teaspoon ground nutmeg |
1 (8 ounce) container low-fat vanilla yogurt |
6 tablespoons honey |
2 eggs, beaten |
3 tablespoons vegetable oil |
1 teaspoon vanilla extract |
1/2 cup seedless raisin |
Directions:
1. Preheat oven to 400. Grease 6 large muffins cups. 2. Combine oat bran, flour, baking powder, baking soda, cinnamon and nutmeg in large bowl. combine yogurt, honey, eggs, oil and vanilla in small bowl until blended;stir into flour mixture just until moistened. Fold in raisins. Let stand 5 minutes. Spoon into prepared muffin cups, filling 2/3 full. 3. Bake 20 to 25 minutes or until wooden pick inserted in center comes out clean. Cool in pan on wire rack 5 minutes. Remove from pan. Cool on wire rack. |
