Honey Tarragon Turkey and grape salad |

Ingredients:
2 tablespoon(s) cider vingar |
1 tablespoon(s) honey |
1 tablespoon(s) tarragon chopped |
salt and freshly ground black pepper |
3 tablespoon(s) mild olive oil |
1/4 pound(s) 3/4 cup green grapes large one cut into quarters, smaller ones cut in half |
1/4 pound(s) 3/4 cup red grapes |
1/2 cup(s) sweet onion 1/4 inch dice |
1 large celery rib 1/4 inch dice |
12 ounce(s) cooked boneless skinless turkey tenders bite size pieces |
Directions:
1. To make dressing: In lg bowl, combine vinegar, honey, tarragon, salt and pepper. Slowly whisk in oil to form dressing. 2. To make salad: Add grapes, onion, celery and turkey. ( I have used chicken instead sometimes) Toss to coat evenly. Taste. Adjust seasoning as needed, adding salt and pepper and/or honey. Let sit for 20 minutes before serving. Can be refrigerated for up to 3 days. |
