A less expensive alternative to the kind that are in the little cans in the store. Ingredients:

2 cups whole almonds with skins on |
1/4 cup sugar (don't skimp on it) |
1/2 tsp salt |
2 tbsp honey |
2 tbsp water |
2 tsp olive oil |
Directions:
1. Roast almonds in 350 degree oven for 30 minutes or until crunchy 2. In a bowl, mix together the sugar and salt, set aside 3. In a heavy saucepan, place honey, water and oil and heat to boiling on med. 4. Add almonds, stirring constantly 5. Continue cooking and stirring until all liquid is gone 6. Remove to the sugar/salt mixture and toss 7. Plate to cool 8. Save your left over sugar/salt mixture for the next batch |
