a light, healthy muffin Ingredients:
1 1/2 cups whole wheat flour |
2 teaspoons baking powder |
1 teaspoon ground cinnamon |
1/4 teaspoon salt |
1/2 cup silken tofu |
3 tablespoons unsweetened applesauce |
1/4 cup honey |
1 egg |
2 egg whites |
1 cup cooked brown rice |
Directions:
1. preheat oven to 375. 2. In a large bowl, whisk together flour through salt. 3. In a processor, blend tofu and applesauce until smooth. 4. Blend in honey, then eggs. 5. pour over dry ingredients. 6. add rice and stir. 7. spoon batter into muffin tins coated with non stick spray. 8. bake for 18 to 20 minutes. |
