This recipe came from a dear neighbor when we first moved to our new home in 1977. My 3 sons just loved it. It is very addictive and always a hit. Ingredients:
3 qts. popped popcorn |
1 1/2 cups cashews |
1 cup sugar |
1/2 cup honey |
1/2 cup light corn syrup |
1 cup creamy peanut butter |
1 teaspoon vanilla extract |
Directions:
1. Toss together popped popcorn and cashews in a large roaster pan; keep warm in a 250-degree oven. 2. In a heavy 11/2-quart saucepan, combine sugar, honey and corn syrup. Bring mixture to a rapid boil over medium heat, stirring constantly; boil for 2 minutes. Remove from heat; stir in peanut butter and vanilla. Immediately pour over popcorn mixture, stirring to coat thoroughly. Spread on greased aluminum foil to cool. Break into bite-size pieces. |
