You won't be sorry if you use a little of your pecan stash to make these! I got this recipe out of Southern Living magazine. Ingredients:
1 1/4 cups flour |
1/3 cup sugar |
1/2 cup butter, softened |
2/3 cup sugar |
1/2 cup honey |
3 tablespoons all-purpose flour |
1/4 teaspoon salt |
2 eggs, lightly beaten |
2 tablespoons butter, melted |
1 1/2 teaspoons vanilla extract |
1 cup pecans |
Directions:
1. Combine 1 1/4 cups flour and 1/3 cup sugar in a bowl; cut 1/2 cup butter into flour mixture with a pastry blender until mixture resembles coarse meal. 2. Press firmly and evenly into an ungreased 9x13 inch pan. 3. Bake at 375* for 10 to 15 minutes or until edges are lightly browned. 4. Combine 2/3 cup sugar and remaining ingredients; pour over prepared crust. 5. Bake at 375* for 20 to 25 minutes, shielding with foil the last 5 minutes, if necessary. 6. Cool on a wire rack. 7. Cut into 1 1/2-x1-inch bars. 8. Yield: 4 1/2 dozen. |
