A sourdough version of my favorite Honey Oat Bread for the kitchen aid mixer Ingredients:
2 cups proofed active starter |
1/2 cup melted butter |
1/2 cup honey or 1/2 cup corn syrup |
1/2 cup water |
1 cup of 5 grain cereal, coarsely milled (can use quick oats) |
4 -5 cups bread flour (or more as needed) |
2 eggs |
1 pinch salt |
Directions:
1. melt butter mix in a small bowl with water and honey (make sure temperature is less than 120). 2. add proofed starter and mix 3. In stand mixer, add oats and 3 cups of flour and whirl with the dough hook until combined. 4. add wet ingredients and mix on speed 2 until combined. 5. add eggs. 6. mix until combined, continue to mix on speed 2. 7. add additional flour, 1/2 cup at a time until dough clings to hook and cleans the sides of the bowl. 8. knead for 7 more minutes. 9. transfer dough to oiled bowl and turn to coat. 10. let rise until at least doubled in size. 11. punch down. 12. divide into 2 loaves. 13. let rise again until risen higher than tops of pans. 14. bake at 350 until crust sounds hollow when tapped. |
