Honey Mustard-Whipped Sweet Potatoes |

A spin on sweet potatoes and oh sooo good. Almost fat free. Ingredients:
1 tablespoon butter |
1/2 cup onion, sliced |
3 medium sweet potatoes, about 2 #, peeled and cut into 1 inch pieces |
1 tablespoon dijon mustard |
1 tablespoon honey |
1/4 teaspoon pepper |
1 cup reduced-sodium chicken broth |
Directions:
1. Melt butter in a large saucepan over medium heat. Add onion and sweet potatoes; saute 5 minutes. Add mustard and remaining ingredients; bring to a boil. Cover, reduce heat, and simmer 20 minutes or until sweet potatoes are very tender. 2. Once cool enough, place in a food processor or blender and process until smooth. |
