Honey Mustard Turkey Salad |

If youre ever in the Gatlinburg/Pigeon Forge area, a trip to the Apple Barn Cider Mill is a must. This recipe is from the Apple Barn Cider Mill & General Store Cookbook. I leave out the green pepper and celery as my crew won't eat them. Prep time includes chill time. Ingredients:
1/2 cup fat-free mayonnaise |
2 tablespoons honey |
1 1/2 tablespoons dijon mustard |
3/4 teaspoon light soy sauce |
3/4 teaspoon lemon juice |
2 cups chopped cooked turkey |
1/4 cup chopped green onion |
1/2 cup chopped celery |
1 large apple, chopped |
1/4 green bell pepper, chopped |
1/4 cup toasted almonds or 1/4 cup cashews |
1/2 cup raisins (or sometimes i use dried cranberries) or 1 cup red seedless grapes |
Directions:
1. Mix mayonnaise, honey, Dijon mustard, soy sauce and lemon juice in small bowl. 2. Combine turkey, green onions, celery, apple, green pepper, almonds and raisins in large bowl. Add honey mustard sauce and mix well. Chill for 2 hours. |
