Honey Mustard Potato Salad |

A warm potato salad with a delicious yogurt, honey and mustard dressing, lemon zest and chives. Perfect for those late summer nights with just a little nip in the air! Ingredients:
1 lb red-skin new potatoes, halved (quartered if very large) |
1/2 tsp kosher salt |
1/2 tsp pepper |
2 tbsp low-fat plain yogurt |
1 tbsp lemon juice |
1 tbsp whole-grain mustard |
1/2 tbsp honey |
1 garlic clove, pressed |
1 tsp lemon zest |
2 tbsp minced chives |
Directions:
1. Preheat oven to 400F, line a baking sheet with parchment paper or foil. 2. Arrange potatoes, cut-side up, on the sheet in one layer. 3. Sprinkle with salt and pepper and mist with a light coating of cooking spray. 4. Roast 35 minutes. Transfer to a serving bowl. 5. In a small dish mix together yogurt, lemon juice, mustard, honey, garlic, lemon zest and chives. 6. Pour dressing over the potatoes, toss well to coat. 7. Serve immediately. |
