Honey Mustard Potato Salad |

A nice salad for a summer bar-b-que or anytime. My family likes this salad anytime of the year. Recipe from Better Homes and Garden. Ingredients:
3 lbs red potatoes, with skin cooked, cooled and cubed |
1 cup mayonnaise |
3 tablespoons honey |
2 tablespoons yellow mustard |
1 tablespoon fresh lemon juice |
2 teaspoons prepared horseradish |
1 teaspoon paprika |
1/2 teaspoon garlic powder |
1/2 teaspoon onion powder |
2 (4 1/4 ounce) cans lindsay chopped ripe olives |
1/2 cup finely shredded sharp cheddar cheese |
3/4 cup finely diced fresh fennel (anise) |
1/2 cup finely diced red be pepper |
kosher salt & freshly ground black pepper (optional) |
Directions:
1. In a large bowl, combine mayonnaise, honey, mustard, lemon juice, horseradish, paprika, garlic powder, and onion powder. 2. . Add olives, cheese, fennel and red pepper; mix well. Add potatoes; mix well. 3. Season to taste with salt and pepper if desired. Chill at least one hour before serving. |
