Honey Mustard Marinated Vegetables |

In the interest of new year's resolutions and eating healthier... Ingredients:
1/2 lb fresh green beans, trimmed |
1 1/2 cups fresh baby carrots |
1 1/2 cups cauliflower florets |
1 cup fresh small button mushroom, whole |
1 red pepper, sliced into thin strips |
1/3 cup honey mustard dressing (fat free if you'd like) |
1/4 teaspoon dried dill weed or 1/4 teaspoon basil |
1/4 teaspoon salt |
Directions:
1. Boil water in large saucepan to cook green beans, carrots and cauliflower for 3-4 minutes. Rinse with cold water to cool. 2. In a bowl, mix dressing, salt, and herbs. Add cooled veggies, red pepper strips, and mushrooms. Stir to coat, and chill an hour or so. |
