Honey Mustard-Glazed Chicken |

Ingredients:
1/4 cup low-sodium soy sauce |
2 tablespoons rice vinegar |
2 tablespoons honey |
1 tablespoon dijon mustard |
1 tablespoon dark sesame oil |
2 teaspoons grated peeled fresh ginger |
2 garlic cloves, minced |
2 bone-in chicken breast halves (about 1 1/2 pounds) |
2 chicken leg quarters (about 1 1/2 pounds) |

Directions:
1. Combine first 7 ingredients in a small bowl, stirring with a whisk. Pour into a large zip-top plastic bag. Add chicken; seal bag, and marinate in refrigerator at least 30 minutes, turning occasionally. 2. Preheat oven to 425°. 3. Remove chicken from bag; reserving marinade. Pour marinade into a 1-cup glass measure, and microwave at HIGH 1 minute or until boiling. Arrange chicken in a foil-lined broiler pan coated with cooking spray. Bake at 425° for 35 minutes or until done, basting twice with marinade. Remove skin before serving. |
