Honey Mustard Chicken Breasts |

This is an often repeated recipe in our monthly menu. Can be easily doubled, though I've never tried freezing it. Ingredients:
4 chicken breasts |
1/4 cup honey |
3 tablespoons vinegar |
1 tablespoon dry mustard |
2 green onions, chopped |
1 tablespoon mustard |
3/4 teaspoon oregano |
Directions:
1. Rinse chicken w/ cold water, pat dry with paper towels. 2. Score breasts lightly on both sides about 5 times. 3. Preheat oven to 400°F. 4. Line a baking pan with foil. 5. Spray foil with non-stick cooking spray. 6. In a small bowl, stir together vinegar, and dry mustard. 7. Add honey, green onions, mustard and oregano, mix well. 8. Place chicken in prepared pan, brush with 1/2 of honey sauce. 9. Bake 15 minutes. 10. Flip over and brush with remaining sauce. 11. Bake another 15 minutes. |
