From the Calorie Queens cookbook. Ingredients:
6 boneless skinless chicken breasts |
1/2 teaspoon salt |
1/4 teaspoon pepper |
1 tablespoon canola oil |
1 tablespoon unsalted butter |
1/3 cup honey |
2 tablespoons dijon mustard |
1 tablespoon all-purpose flour |
1/2 cup chicken broth |
Directions:
1. Dry the chicken breasts with paper towels, then season with salt and pepper. 2. Heat the oil and butter in a large skillet over medium-high heat. 3. Brown the chicken in the skillet, 4-5 mnutes per side. Remove from the pan and set aside. 4. Whisk together the honey, mustard, flour and broth. 5. Add to the skillet and bring to a boil. 6. Once the sauce thickens, return the chicken to the pan and cover it. 7. Simmer the chicken in the sauce over low heat for 10-15 minutes. |
