Honey-Mint Poppyseed Dressing |

Luscious over fresh fruit! We like a salad of sliced strawberries, cantaloupe, and red and green grapes. Ingredients:
2/3 cup sugar substitute (splenda) |
1 teaspoon dry mustard |
1 teaspoon paprika |
1 tablespoon poppy seed |
1/4 teaspoon salt |
1/3 cup honey |
1 tablespoon lemon juice |
1/3 cup white wine vinegar |
3 tablespoons mint, finely chopped |
3/4 cup canola oil |
Directions:
1. Mix dry ingredients. 2. Add honey, vinegar, mint, and lemon juice. 3. Using a hand mixer set on high, beat everything until well blended, then very, very slowly add oil, a few drops at a time, until mixture begins to emulsify. When thicker, oil may be poured more freely. Dressing should coat a spoon when proper consistency is reached. Pour over 4 cups mixed fresh fruit. |
