1/3 cup vegetable shortening |
1/2 cup sugar |
1 egg |
2/3 cup honey |
1 teaspoon lemon extract |
2 3/4 cups all-purpose flour |
1 teaspoon baking soda |
1 teaspoon salt |
Directions:
1. In a large bowl, cream vegetable shortening, 2. sugar, egg, honey, and lemon extract until light 3. and fluffy. Sift in flour, baking soda, and salt; 4. stir until well blended. Refrigerate dough at 5. least 1 hour or overnight. 6. Preheat oven to 375 degrees. Lightly grease 7. cookie sheets. On a lightly floured board, roll 8. dough to 1/4-inch thick; cut into desired 9. shapes with cookie cutters. Place 1 inch apart 10. onto prepared cookie sheets. 11. Bake 8 to 10 minutes or until edges are light 12. brown. Remove from oven and cool on wire 13. racks. When cool, frost with Milk-Frosting 14. and decorate if you wish. 15. Yields 5 dozen cookies. 16. MILK FROSTING 17. 1 cup powdered sugar 18. 1/2 teaspoon lemon extract 19. 1 to 1 1/2 tablespoons milk 20. In a small bowl, combine powdered sugar, 21. lemon extract, and enough milk to make 22. frosting easy to spread. Tint, if desired, with a 23. few drops of food coloring. |
