Honey-lime Granola With Almonds |

This recipe may sound unusual, but it is to die for! The tangy lime flavor makes your mouth water! Ingredients:
· 3 cups old-fashioned rolled oats |
· 1 cup sliced almonds |
· 1/4 cup wheat germ |
· 1/2 cup unsweetened coconut |
· 1/2 cup oat bran |
· 3 tbs. flax seeds |
· 1/2 cup honey |
· 1/4 cup oil |
· 2 tbs. limeade concentrate |
· 1/2 tsp. salt |
· 1 tsp. vanilla |
· 1 small lime, zested and juiced |
Directions:
1. Preheat oven to 250 degrees. 2. Lightly grease a foil-lined jellyroll pan with cooking spray. 3. In a large bowl, toss together oats, almonds, wheat germ, coconut, oat bran, and flax seeds. 4. In a small bowl, whisk together honey, oil, concentrate, salt, vanilla, lime zest, and lime juice. 5. Pour lime mixture into oat mixture, stir well to combine. 6. Spread out on prepared pan. 7. Bake for 1 1/2 hours or until golden brown and lightly crispy, stirring every 15 minutes. 8. Cool and store in an airtight container at room temperature. |
