I love this dish! The combination of lemon and honey is delicious, and the ginger gives it a nice little flavour kick. I serve this with my Cashew Raisin Rice Pilaf and fresh steamed broccoli. Ingredients:
2 1/2-3 lbs cut up chicken pieces |
2 tablespoons butter |
1/2 cup honey |
1/2 cup water |
1/4 cup butter, melted |
1/4 cup lemon juice |
1 teaspoon ground ginger |
Directions:
1. In a large frying pan melt the 2 tablespoons butter and brown chicken pieces on all sides. 2. Combine remaining ingredients and pour over chicken. 3. Cover and cook over low heat, basting occasionally, for 35 to 40 minutes or until chicken is tender. |
