This was also served at the recent Brunch I went to...also from a recent issue of Parties Magazine...This was a delicious blend of fruits...this could be served at any meal time. Ingredients:
4 lemons, juiced and divided |
4 empire apples or other red apples, cored and chopped with peel. |
1 can pineapple chunks in juice (20 oz) |
1 cup fresh, frozen or canned blueberries |
1 can mandarin oranges, drained (11 oz) |
4 kewis, peeled and sliced |
1 cup honey |
1/4 cup olive oil |
garnish: additional kiwi slices and blueberries |
Directions:
1. In a large bowl, combine the juice of 1 lemon and chopped apples; toss to coat to prevent browning. 2. Drain pineapple chunks, reserving 3/4 cup juice. 3. Wash, drain and dry blueberries. 4. Add pineapple chunks, mandarin oranges, kewi slices, and blueberries to apples. 5. In a small bowl, combine reserved 3/4 cup pineapple juice, honey, juice of remaining 3 lemons, and olive oil; whisk well. 6. Pour over fruit mixture, and toss gently to coat. 7. Cover and refrigerate until serving time. 8. If desired garnish with additional kiwi slices and blueberries. |
